- Recipe and method for Boiled Beef and Plantain:
- Ingredients:
- 8-10 dasheen (calallo) leaves (I'd use 2lb)
- 2 lb green plantains, peeled
- 2-3 lb breadfruit, peeled (you could probably double this or so up out for more plantains if you're feeling extra mean to the prisoners), prepared for cooking
- 1 scotch bonnet (or habenero) pepper (again this is local but feel free to leave it out)
- 1/2lb corned beef - (I'd use those little square tins that you have to pry open
- Water - as a substitute for coconut milk
- Method:
- Wash and peel breadfruit. Cut into 8 sections. Remove center lengthways of each section and cut into half crosswise.
- Chop dasheen leaves coarsely. Don't do this if you are using spinach
- Place the greens on the bottom of a pot, then layer with breadfruit, more greens, plantains, the meat, and more greens.
- Cover with enough water to cover the surface of the greens.
- Boil for 1-3 hours, preferably over an open fire, or until breadfruit and plantains are soft.
- Serve hot with a side of sadness.
